Simple soy sauce | sweet-and-sour
Beb’s chapter about sauces is superb. I understand now how much a sauce can enhance a dish. This soy sauce is great with grilled pork chops for example but will do well with fish too!
This sauce is enough for 3-4 people and ready in five minutes.
Simple soy sauce #461 translated from Beb Vuyk’s Groot Indonesisch Kookboek, pagina 375.
Ingredients
- 2 chopped cloves of garlic
- 2 tablespoons of soy sauce
- 1/2 tablespoon of vinegar or lemon juice
- Grind the garlic and add the soy sauce with vinegar and or lemon juice and a few drops of water.
- Grind everything together.
Yes it’s that simple. I use super sweet soy sauce from ABC. I like that one the best. I grind the garlic in my mortar. If you do not have one to make this simple soy sauce, than crunch your garlic with a knive and mix it through your soy sauce. With lime this sauce tastes a bit different and is also very delicious.
Because I use a sweet soy sauce this simple soy sauce is sweet-and-sour. With soy sauce that is primarily salty in flavor, this sauce will be different. So experiment!

It is a very fragrant and fresh sauce. Sweet! Great with pork.
