Pastel Chinese

This pie or pastel Chinese contains a few funny ingredients: koeping tikoes and sedep malam. The first means mouse ears and the second literally translates as: a beautiful night. This is the flower of Polianthus Tuberosa; the tuberose. These are sold dry and need to soak before they are used in a dish. Would you rather make a simpler pie? Mouse ears are a type of mushroom. These are also sold dried and need to soak to become completely flexible again. This recipe is enough for people and is done in 45 minutes to an hour.

Ingredients

  • mashed potatoes from 1/2 kg potatoes
  • 4 fried sausages
  • 50 grams of koeping tikoes (Chinese mushrooms)
  • 50 grams of sedep malam
  • 25 grams of laksa
  • 1 large finely chopped leek
  • 2 tablespoons of chopped celery
  • juice of 1 clove of garlic
  • 1 chopped clove of garlic
  • 2 tablespoons of fried onions
  • 2 hard-boiled eggs
  • 1 raw egg
  • pepper
  • salt
  • butter
  • breadcrumbs
  1. Soak the koeping tikoes, the sedep malam and the laska separately for some time in advance.
  2. Fry the onions until crispy brown and make the mashed potatoes in the usual way, mix it with the beaten egg. If necessary, stir in the juice of a clove of garlic.
  3. Remove the skin from the sausages and cut them into slices. Fry them with the leek and garlic.
  4. Finish the gravy with the remaining old gravy and the soaking water from the koeping tikoes. Cut the koeping tikoes into pieces, as well as the sedep malan.
  5. Stew them with the sausages and also add the laska, which should stew for a while.
  6. Put the mixture in a buttered ovenproof dish, sprinkle the celery over it and cover it with the eggs cut into wedges and the fried onions. Spread the mashed potatoes over everything, sprinkle the surface with breadcrumbs and put a few knobs of butter on it.
  7. Put the dish in an oven at 250 º C (gas mark 5-6) for 1/2 hour.
  8. Let it get a brown crust.

I start by soaking the mushrooms and the laksa in some warm water.

Then I make a mashed potato with an egg in it and enough pepper and salt. I also go for the clove of garlic that Beb mentions.

I fry all the ingredients and add the soaked laksa. Then I can prepare the oven dish with the eggs and onions.

On top comes the layer of mashed potato and breadcrumbs. I add pieces of butter and then it can go in the hot oven (250 degrees).

I like pie there and you can easily use all kinds of leftovers in it. But I have to admit that I like the other (simpler) pie dish. It is less complex, also in taste.
