Omelet with Sambal Goreng

This omelet with sambal goreng is a perfect leftover recipe. You make a large omelet and fill it with any sambal goreng you like or have left. Delicious and perfect for dinner, or as a quick vegetarian dish.
This sambal goreng omelet is ready in 20 minutes, even if you still need to make sambal goreng from scratch, like me, because the omelet is cooking while the sambal goreng is stir-fried. Serves 3-4.

Ingredients
- 4 eggs
- leftover sambal goreng, any kind
- 4 tablespoons water
- 2 tablespoons oil
- pepper
- salt
- Whisk the eggs with the salt, pepper, and water until light and fluffy.
- Fry it in a skillet to make an omelet. After the omelet has turned, remove it from the heat.
- Brush the cooked side facing up with the remaining sambal goreng, making sure it’s not too wet.
- Roll it up, return the pan to the heat, and fry the omelet briefly on both sides.
- Transfer to a plate and cut into diagonal strips 2 to 3 cm wide.
- If the sambal goreng is quite moist, you can replace the water used to beat the eggs with the sambal goreng liquid.

I don’t have any leftover sambal goreng, but I do have a lot of beans from my garden. I stir-fry these with fresh galangal, jeruk purut, lemongrass, gula Jawa, an onion, and garlic. Of course, I also add sambal and a little coconut cream. But any sambal goreng will do. There are several in the sambal goreng chapter. I drain the liquid from the sambal goreng so it doesn’t get too wet and use some of it for the omelet.

I ended up adding too much sauce to the eggs, and the omelet became too soft to flip properly, but it turned out nice and tasty. Meanwhile, I stir-fry the onions, garlic, and other ingredients to make my sambal goreng.

At the last minute, I add the coconut cream and let everything simmer for a few more minutes.

Now I can pour the sambal goreng over the omelet in the pan. I can’t flip the omelet first because it’s too soft, but it still turns out very tasty. I sprinkle some seroendeng on top, and that makes it perfect. We enjoy it with white rice and some extra sambal.

I fold the omelet with sambal goreng gently and this works perfectly too.
