Steamed Coconut Buns
My coconut bun version of Jamie Olivers steamed coconut buns found on this website. I love this recipe and want to share it here, because I can ;-).
These steamed coconut buns are ready in 10 minutes ( ! ). No butter or sugar goes in to the dough. Only coconut milk and flour. For sweet steamed coconut buns , I use a piece of Gula Jawa ( Javanese sugar).
Ingredients
I use about 400 grams of coconut milk, or soak a 1/3 piece of santen in hot water until a milky substance,
I add approximately 400 grams of self-rising flour
coconut flakes
and a pinch of salt
food coloring (aroma pasta)
Mix it to a soft dough. Add more flour if the dough is still sticky. Knead a hand full of coconut flakes into the dough. Now add the food coloring. I get the colors at my local toko. I separate the dough in 3 large pieces and drip a different color and flavor over each piece. I use rose sirup, pandan and pandan coconut. Mix it into the dough, not perfectly but leave it marbled.
Use a pan with a steamer basket. I use my rice cooker and turn it on steaming. Separate the dough in even sized small balls put them in a muffin case or on a piece of baking paper in the steamer basket.
Steam the buns with the lid on for 10 minutes.
Easy when you have people over and want to fix a great snack. You can fill the buns with anything. I will experiment with different fillings. It is probably delicious with pisang susu.
Btw, you can freeze them in a large bag all together with the cupcake paper still on. Whenever I need, I pop 2 in the microwave for 50 seconds and dessert is ready – great with ice cream…
