Omelet with grated potatoes

This vegetarian omelet with grated potatoes is wonderfully airy and crunchy. I’m using sweet potato today. I use 1 egg and 1 potato. That makes three omelets. I keep the rest of the ingredients the same. Nice and high on flavor, just as I like. Here’s Beb’s recipe.
This recipe is made in 30 minutes and is enough for 3 people.

Ingredients
- 2 eggs
- 4 potatoes grated
- oil or butter
Spices
- 1 tablespoon chopped onion
- 1/2 teaspoon sambal ulek
- juice of 1 clove of garlic
- salt
- pepper
- Beat the eggs lightly with the onions, sambal, garlic juice, salt and pepper.
- Coarsely grate the potatoes and mix them into the batter.
- Bake cookies in the frying pan in the three-in-a-pan manner.

Three in the pan is a (Dutch) traditional mini pancake cooked, as the name suggests, by putting three dollops of batter in one pan. My mom used to make them with raisins. Delicious but today our three-in-a-pan are savory.

My sambal is not in the picture, but I add half a rawit. Half a chili is also good in terms of spiciness. Homemade sambal goes great with these omelets. Find all my sambal recipes here.
It really is a super easy recipe: mix the ingredients with the grated potato and make pancakes that you fry in oil or butter. I use a quarter teaspoon salt and half a teaspoon pepper for my quantity (3 pancakes). For Beb’s recipe I would go for half a teaspoon of salt and a whole teaspoon of pepper. Salamat makan!
