I’ve selected 5 easy Asian Easter recipes I love to make during spring. Eggs are of course a favorite ingredient. If you like to see more Asian egg recipes, click here.

During Easter, or every other day during spring, I love to make lunch with soup, like a delicious wonton soup. It’s also fun to make these pasta packages filled with anything you like.

Vietnamese spring rolls are also great, especially in spring and summertime. I love to roll them with shrimp and avocado. Spring rolls always need coriander and mint leaves by the way. These herbs give them that special fresh flavor. I make my own hoisin sauce to dip these crispy, sticky and healthy snacks in; great for picnics too.

For a late supper or main course, a terrific egg dish with coconut will do, like Beb Vuyk’s rendang telor. The creamy eggs turn bright yellow because of the turmeric in the bumbu. The chili gives it a tender punch but not too much. The cream in the coconut sauce will temper the heat. I love Beb Vuyk’s egg dishes. They are always easy and healthy. For dessert or to bring to a picnic, I suggest my simple coconut pie with ginger. This super easy, chewy coconut pie makes your house smell like the tropics and will be finished in a flash. This recipe is based on Beb Vuyk’s recipe for coconut pie. I’ve added fresh baby ginger and I have sort out the baking time for you. In old recipes backing time is often excluded.

    My question is for the Nasi Kuning recipe. What is the difference between coconut cream and coconut milk. When I need “Santen” I use the coconut milk in a can. My Asian store also sells the coconut cream. Hartelijk dank!
