Cooked Noodles

Preparation Indonesian noodles
Beb describes how to cook noodles on page 392 of her Groot Indonesisch Kookboek (1973). There are a few things you have to keep in mind.

It’s more or less just like macaroni and spaghetti. Boil the noodles in plenty of water with a bit of salt.

Boiled noodles #488 translated from Beb Vuyk’s Groot Indonesisch Kookboek, page 392.

Ingredients

1/2 kg of noodles
boiling water
salt
2 tablespoons oil

Do not throw all the noodles in when the water is boiling. Place them slowly piece by piece in the boiling water. Otherwise, the temperature of the water will drop too fast. When all the noodles are in, gently pull the noodle strings with two forks apart – while cooking.

Important for the best result: rinse! When they are done rinse the noodles in a sieve or strainer with cold water. This prevents sticking and also stops the cooking process. They will stay okay for 2 or 3 days in the fridge. If you want to use them pour over hot water to warm them up again.

Rinse noodles
Beb says that after rinsing a few tablespoons of oil will stop the noodles from sticking. I do not use oil, not even with pasta. I do not think it is necessary. If you rinse your noodles directly after cooking, you wash the starch away and that will stop it from sticking anyway. Additional oil is not necessary.
